Pressure Canning!

Jungle camp is quickly creeping upon us and weekends are looking more and more full until then so we decided to get our meat canning over with. Contrary to the smiles on our faces, it wasn't the most fun, but rather confusing and scary. But we finished canning 14 jars of ground beef, stew meat, and pepperoni. So far only one didn't process and 'pop' but still waiting on a few as we just pulled them out! We bought canned chicken and salmon as they are cheaper and lighter that way. Everything has to be hauled up to jungle camp on foot... packing light has more meaning now.

Hey guys! I found your blog through Lindy's! It's great to be able to keep updated with you two. Jungle camp sounds interesting and scary at the same time. Can't wait to hear more about that! Is this canning thing something you're going to have to do often in the field?
